BLOOD ORANGE YOGURT CAKE

Ingredients:

  • 1 cup sugar
  • 1/2 blood orange juice and zest
  • 1/2  cup 2% greek yogurt
  • 3 large eggs
  • 1/2 tsp vanilla extract
  • 1 1/2 cup all purpose flour
  • 1/4 tsp salt
  • 2 tsp baking powder
  • 1/2 cup canola oil
  • 6 slices blood orange, dehydrated
ICING
  • 1 cup powdered sugar
  • 3 tbsp blood orange juice

Instructions:

  1. Preheat over to 200F. Cut 6 thin slices of blood orange and place on a cooling rack in a baking sheet. With a paper towel, blot the tops of the blood orange slices and place in the oven for 6-8 hours until dehydrated.
  2. Pre-heat your oven to 350F with a rack in the middle. Grease a circular 8” cake pan (or loaf pan) with some butter and set aside.
  3. In a large mixing bowl, combine the all-purpose flour, salt and baking powder.
  4. In a mixer with the paddle attachment, combine the sugar with the blood orange zest until it releases moisture and the sugar is moist and lumpy. Mix in the blood orange juice, yogurt, eggs and vanilla extract. Then combine the dry ingredients followed by the oil, until just incorporated. The batter should look smooth and glossy.
  5. Transfer the batter to the pan and bake for 45-50 minutes, until golden. Insert a toothpick in the center of the cake and ensure it comes out clean.
  6. Transfer the cake to a cooling rack for 30 mins – 1 hr until fully cooled. While the cake is cooling prepare the icing by whisking the powdered sugar with the blood orange juice until it has the right consistency. Drizzle the icing over the cool cake and place the dehydrated blood orange slices.
