CREAMY LEMONY HUMMUS

Ingredients:
Hummus
- 1 15oz garbanzo beans, drained & rinsed
- 1 lemon, juiced
- 2 garlic cloves, roughly chopped
- 1/4 lemon zest
- 1/3 cup tahini
- 1 tsp ground cumin
- 1 tsp ground smoked paprika
- 1/4 cup olive oil
- 1/4 cup liquid from garbanzo beans
- salt & pepper
Salad over the hummus
- 1/2 cup heirloom tomatoes, quartered
- 1/4 cup red onions, chopped
- 1/2 cup cucumber, chopped
- 1/3 parsley, chopped
- Salt & pepper to taste
Instructions:
- Pour the garbanzo beans in a strainer and rinse. Save about a quarter cup of the liquid from the can. Remove the skin off each garbanzo bean then discard the skins.
- Pour the garbanzo beans, lemon juice, garlic, lemon zest, tahini, cumin and paprika in a food processor. Turn on low speed for 1 minute then on high speed for another 1-2 mins while gradually add olive oil and garbanzo beans liquid until the hummus consistency is smooth.
- Pour in a bowl and top with the salad. Enjoy with your fav veggies or pita chips!
