Ingredients:

Hummus
  • 1 15oz garbanzo beans, drained & rinsed
  • 1 lemon, juiced
  • 2 garlic cloves, roughly chopped
  • 1/4 lemon zest
  • 1/3 cup tahini
  • 1 tsp ground cumin
  • 1 tsp ground smoked paprika
  • 1/4 cup olive oil
  • 1/4 cup liquid from garbanzo beans
  • salt & pepper
Salad over the hummus
  • 1/2 cup heirloom tomatoes, quartered
  • 1/4 cup red onions, chopped
  • 1/2 cup cucumber, chopped
  • 1/3 parsley, chopped
  • Salt & pepper to taste

Instructions:

  1. Pour the garbanzo beans in a strainer and rinse.  Save about a quarter cup of the liquid from the can.  Remove the skin off each garbanzo bean then discard the skins. 
  2. Pour the garbanzo beans, lemon juice, garlic, lemon zest, tahini, cumin and paprika in a food processor. Turn on low speed for 1 minute then on high speed for another 1-2 mins while gradually add olive oil and garbanzo beans liquid until the hummus consistency is smooth. 
  3. Pour in a bowl and top with the salad.  Enjoy with your fav veggies or pita chips!
