GRILLED ARTICHOKE & GARLIC DIP
Grilled Artichoke with Garlic Dip

Ingredients:
For the Artichokes
- 2 large artichokes
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1/4 tsp salt & 1/4 tsp pepper
- 1/2 lemon, grilled
For the Garlic Dip
- 5 oz greek yogurt
- 1/2 lemon, juiced
- 1 garlic clove
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne
Instructions:
For the artichoke
- Wash and cut the artichokes in half cut off the tips of the artichoke leaves. Bring water to boil in a large steamer pot.
- Place the artichoke cut side down for 25-30 mins until you can pull off an outer leave. Use a spoon to scoop out the fuzzy chokes and the small inner artichoke leaves.
- Meanwhile in a small bowl, combine olive oil, garlic, sat & pepper together and brush on both sides of the artichoke and in between the layers.
- Turn on the grill to medium-high. Grill the lemon and artichoke halves cut-side-down for 3-4 min on each side or until you can stick a fork through the stem. Sprinkle with lemon juice and transfer to a plate.
For the Garlic Dip
- For the dip, blend greek yogurt, salt, pepper, cayenne, garlic, olive oil, lemon zest and lemon juice in a food processor. If too thick, add 1-2 tbsp of water and blend.
- Transfer the dip in a small bowl and serve alongside the artichoke. Enjoy!
