Ingredients:
Empanada Stuffing
- 1 tbsp veggie oil
- 1/4 red & green bell pepper, chopped
- 1/2 large jalapeno, chopped
- 1/2 yellow onion, chopped
- 2 garlic cloves, finely chopped
- 1 lb organic ground beef
- 1 tsp ground cumin
- 1 tsp ancho chile powder
- 1/4 tsp crushed red pepper
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp smoked paprika
- salt & pepper
For the dough
- 1 Puff Pastry Sheet
- 1 Egg
- Flour for rolling
Instructions:
- Preheat oven 400F and place parchment paper on a baking sheet.
- For the stuffing, heat the veggie oil over medium in a cast iron and sauté the red + green bell peppers, jalapeno, and onion until the onion is translucent. Then add and sauté the garlic for a minute. Add the ground beef and season with cumin, ancho chile, crushed red pepper, oregano, thyme, smoked paprika, salt & pepper.
- For the empanada dough, flour a flat clean surface and roll out a sheet of puff pastry. Cut 3” round pieces of puff pastry and add stuffing in middle of each. Fold the dough and pinch the ends with a fork – relocate to parchment paper. Brush each empanada with egg wash and place in the oven for 20 minutes until golden brown. Let cool for 5 minutes and top with cilantro. You can pair this with the yogurt & cilantro dip (see recipe on another post) and enjoy!
