Roasted Tomato, Corn and Avocado Salad

Ingredients:
- 3 ears of corn, shucked & grilled
- 1 tbsp unsalted butter
- 1 cup cherry tomatoes, quartered
- 2 medium avocados, chopped
- 1 lemon, juiced
- salt & pepper to taste
Instructions:
- Shuck the corn and rub unsalted butter all over it then sprinkle with salt & pepper.
- Grill the corn, turning often until it's perfectly roasted. Meanwhile, quarter cut the cherry tomatoes and chop the avocados then transfer to a medium bowl.
- Pour in the lemon juice and salt & pepper to taste. Combine everything together and enjoy!
