Roasted Tomato, Corn and Avocado Salad

Ingredients:

  • 3 ears of corn, shucked & grilled
  • 1 tbsp unsalted butter
  • 1 cup cherry tomatoes, quartered
  • 2 medium avocados, chopped
  • 1 lemon, juiced
  • salt & pepper to taste

Instructions:

  1. Shuck the corn and rub unsalted butter all over it then sprinkle with salt & pepper. 
  2. Grill the corn, turning often until it's perfectly roasted. Meanwhile, quarter cut the cherry tomatoes and chop the avocados then transfer to a medium bowl. 
  3. Pour in the lemon juice and salt & pepper to taste. Combine everything together and enjoy!
