Ingredients:
- 1/3 cup red & green bell peppers
- 1 cup baby potatoes (2), chopped
- 4 chicken maple apple breakfast links, chopped
- 1 shallot, finely chopped
- 1 tbsp vegetable oil
- salt & pepper to taste
- 1 tbsp butter, divided
- 1 garlic clove, finely chopped
- 1 tbsp fresh thyme (3 sprigs), roughly chopped
- 4 eggs
- 2 tbsp heavy cream
- 1/4 cup cheddar cheese, grated
Instructions:
- Preheat oven 375F.
- Place all the chopped ingredients in a medium bowl. Stir in vegetable oil and sprinkle salt & pepper. Stir everything together with a rubber spatula and set aside.
- Meanwhile, in a medium bowl, whisk together the eggs and heavy cream.
- On medium heat, melt butter in each 6” cast irons and throw in garlic for 1-2 mins until aromatic then mix in all the chopped ingredients (evenly divided). Cook for approx. 5 mins until browned then mix in the thyme for about a minute. Pour in the egg mixture (evenly divided) and top with grated cheddar cheese.
- Place cast irons in oven for 18-20 mins until its bubbling and golden on top. Remove from the oven and serve with a slice of toast. Enjoy!
