ZUCCHINI, SQUASH AND TOMATO GRATIN

Ingredients:
- 1 large zucchini, sliced
- 1 large squash, sliced
- 1 large heirloom tomato, sliced
- 1 tbsp olive oil
- 1/2 onion, chopped
- 2 garlic cloves, minced
- 3 sprigs thyme
- 1 1/2cup Rao’s marinara sauce
- 1 tsp Italian seasoning
- 1/2 cup vegetable broth
- pinch of salt & pepper
- 1/2 cup parmesan, grated
- 5-6 basil leaves, julienned
Instructions:
- In a cast iron, heat 1 tbsp olive oil over medium heat and sauté onions until translucent. Add garlic and thyme until fragrant then pour in marinara sauce, vegetable broth and Italian seasoning. Turn the heat on low and add salt & pepper then let it simmer for 5-10 minutes.
- Preheat the oven to 350F. Meanwhile, slice zucchini, squash and heirloom tomato in 1/4 inch slices. Place half the tomatoes mixture in bottom of the baking dish then place the zucchini, square and heirloom tomato slices between one another. Then pour the rest of the sauce over the veggies then top with parmesan. Place in the oven for 35-40 minutes. Take out of the oven and sprinkle with julienned basil and enjoy!
