Ingredients:

Sole Marinate
  • 1.5 lbs of sole fillets
  • 1 cilantro bunch (stems removed)
  • 3 tbsp fish sauce
  • 2 limes, juiced
  • 3 thai chilies
  • 4 garlic cloves
  • 3 tbsp sugar
Dressing
  • 2 limes, juiced
  • 2 tbsp fish sauce
  • 2 tbsp sugar
  • 1 tsp soy sauce
  • 1 garlic clove, minced
  • ½ tsp cushed red pepper
  • 1 thai chili, finely chopped
For the Tacos
  • half head of cabbage, thinly sliced
  • 2 radishes, thinly sliced
  • Cilantro leaves and lime wedges
  • 4-6 Fresh blue corn tortillas
  • Sriracha sauce, if you prefer

Instructions:

  1. Blend the sole marinate ingredients in a blender. Pour the marinade over the sole in a large zip lock and set aside for 30 mins.
  2. Whisk together the dressing ingredients in a small bowl. Prep the cabbage and radishes in a large bowl and mix together with the dressing. Cook the sole in a nonstick pan for about 1-2 mins per side. Warm up the blue corn tortillas and place cabbage, radishes, cilantro and sole with a dash of sriracha, should you wish. Enjoy!
