Ingredients:
Sole Marinate
- 1.5 lbs of sole fillets
- 1 cilantro bunch (stems removed)
- 3 tbsp fish sauce
- 2 limes, juiced
- 3 thai chilies
- 4 garlic cloves
- 3 tbsp sugar
Dressing
- 2 limes, juiced
- 2 tbsp fish sauce
- 2 tbsp sugar
- 1 tsp soy sauce
- 1 garlic clove, minced
- ½ tsp cushed red pepper
- 1 thai chili, finely chopped
For the Tacos
- half head of cabbage, thinly sliced
- 2 radishes, thinly sliced
- Cilantro leaves and lime wedges
- 4-6 Fresh blue corn tortillas
- Sriracha sauce, if you prefer
Instructions:
- Blend the sole marinate ingredients in a blender. Pour the marinade over the sole in a large zip lock and set aside for 30 mins.
- Whisk together the dressing ingredients in a small bowl. Prep the cabbage and radishes in a large bowl and mix together with the dressing. Cook the sole in a nonstick pan for about 1-2 mins per side. Warm up the blue corn tortillas and place cabbage, radishes, cilantro and sole with a dash of sriracha, should you wish. Enjoy!
