Ingredients:

For the Burger
  • 1 lb sockeye salmon (shredded and skin removed will yield 1/2- 3/4 pound of meat)
  • 1 green onion finely chopped
  • 1-2 tbs finely chopped red pepper
  • 2 tbs panko
  • 1 tbs teriyaki sauce
  • 1 tsp freshly grated ginger
  • 1/2 tsp honey
  • 1/2 tsp hoisin
  • 1/2 tsp sirarcha
  • 1/4 tsp white pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt
  • 2 tsp coconut oil (for pan fry)
  • 1/4 tsp sesame oil (for pan fry)
For the Slaw
  • About 1 cup slaw mix
  • 1 tbs Faye Greek yogurt
  • 1 tsp mayo
  • 1 tbs teriyaki sauce
  • 1 tsp rice vinegar
  • 1/4 tsp salt
  • 1/4 tsp brown sugar
  • 1 tsp fresh lime juice (juice from quarter lime)
For the Sauce
  • 1 tbs soy sauce
  • 1 tbs sugar
  • 1 tsp mirin
  • 1 tsp Gochujong
For the Assembly
  • 1/2 avocado
  • 1 tsp Sesame seeds
  • Soft Brioche buns

Instructions:

  1. To prepare the salmon, remove skin by cutting off as much meat as possible. Some people would pulverize the meat in a food processor, but I found that shredding and cutting the flesh into smaller pieces keeps the integrity of the fish and wont let it over cook.
  2. Once you have the meat in a bowl, combine all ingredients above except the coconut and sesame oil, which will be used for grilling. Mix until well incorporated and place in refrigerator for at least 30 minutes. It’s okay if you still have small chunks.
  3. While fish is marinating, make the slaw by mixing together all ingredients. Then pour over slaw. Mix together seal and put in refrigerator until time to assemble burger.
  4. Using a cast iron, heat coconut and sesame oil on medium to high heat. Shape 3-4 burgers with salmon mixture and grill for 3-4 minutes on each side or until the fish is cooked through.
  5. To make the sauce, add sugar, soy sauce, gochujong and mirin to a sauce pan on low heat. Continuously stir everything together until sauce thickens. About 2-3 minutes.
  6. To assemble burger, grill brioche bun, add sliced avocados to bottom, then burger, slaw sesame seeds and sauce.
