Ingredients:
For the Potatoes
- 2 russet potatoes, peeled and cut into ¼ inch strips
Seasoning 1
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp dried parsley
- 1 tsp salt
- ¼ tsp black pepper
Seasoning 2
- ½ tsp truffle salt
- 1 tsp rosemary, finely chopped
- ¼ cup grated parmesan
Instructions:
- Peel and cut 2 russet potatoes into ¼” strips and place into cold water for 45 minutes to an hour.
- Preheat oven to 350F. Towel dry the potatoes then place them on parchment paper on a baking sheet and into the oven. While the potatoes are in the oven bring some canola oil (2-3 inches high) in a large pot.
- Remove the potatoes after 40 minutes and into the hot oil for 2-3 minutes (in small batches). Once the potatoes are golden and crispy, place them into a medium bowl and season with your desired seasoning immediately. Serve with aioli and ketchup. Enjoy!
