Ingredients:
- 3 tbsp olive oil, divided
- 1 large eggplant
- 2 tbsp tahini paste
- 2 garlic cloves
- 1 tsp sumac, plus more for serving
- 1 tsp cumin
- 1 1/2 tsp salt
- 1 tbsp 2% greek yogurt

Instructions:
- Preheat oven to 375F and line a baking sheet with foil.
- Cut the eggplant in half (vertically) and with a sharp knife cut slits in the flesh. Generously brush on olive oil and sprinkle salt on the flesh and place with the flesh side down on the foil and bake in the oven for 30-35 minutes until the skin of the eggplant has wrinkled. Remove from the oven and let it cool 5-10 minutes. Once cooled, peel off the skin and transfer the flesh to the food processor along with tahini paste, garlic, sumac, cumin, salt, greek yogurt, lemon juice and 1 tbsp olive oil. Process until smooth and creamy. Season with additional salt, if needed. Garnished with olive oil and sumac and serve with pita chips. Enjoy!
