Ingredients:

- BEEF KOOBIDEH KABOB
- 1 lb organic ground beef (20% fat or more)
- 1 egg
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp sumac
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 serrano pepper, finely minced
- 3 garlic cloves, finely minced
- 1/4 cup parsley, finely chopped
- 1 yellow onion, finely grated
- 2 tbsp unsalted butter, melted
- SHIRAZI SALAD
- 2 roma tomatoes, chopped
- 1/2 english cucumber, chopped
- 1 avocado, chopped
- 1 lemon, juiced
- salt & pepper
- CHUTNEY
Instructions:
- Cut the onion into quarters and place in a food processor. Blend until finely grated. Place the grated onion in a kitchen towel, twist a few times and wring out the excess water.
- In a medium bowl, place all your ingredients along with the grated onion and combine everything with your hand. Carefully wrap the meat with your hands onto 1” wide stainless steel skewers and place on the grill until the meat is cooked through – approx. 3-4 mins on each side (might be longer depending on your grill).
- Meanwhile, chop the roma tomatoes, cucumbers and avocados and place in a medium bowl. Pour the lemon juice on top and season with salt & pepper, to taste. Warm up some pita bread and place on a platter. Place the cooked meat over the bread and brush the meat with some butter. Garnish with chopped parsley and Enjoy!
