BASIL PESTO PASTA
Basil pesto pasta screams SPRING! With such bright, light and bold flavors, it’s easily one of my favorite weeknight meals and ready in under 30 minutes.
The simple ingredients include:
cherry or grape tomatoes
mini mozzarella balls
asparagus
fresh basil
My homemade basil pesto
Bring a large pot of water to boil over high heat then pour in olive oil and salt. Add the pasta and cook until al dente.
Meanwhile cut off any woody bottoms and cut into 2 inch pieces. Bring a large skillet with water to a boil and add salt. Add the asparagus and cook for 3-4 mins. Transfer to an ice bath to stop it from cooking for 2 minutes then drain the water and set aside.
Wash and prep the rest of the veggies & mozzarella balls. Set aside.
Drain the pasta and transfer to a bowl. Add the basil pesto and combine then add tomatoes, asparagus, mozzarella and ripped basil leaves.
Combine everything. Transfer to a bowl and enjoy!
