Ingredients:

For the Panna Cotta
  • 1 cup whole milk, divided
  • 2 tsp unflavored gelatin
  • 2 1/2 cups heavy whipping cream
  • 1/2 cup sugar
  • peel from 1 blood orange
  • 1 tsp vanilla extract
For the Jam
  • Zest from 2 blood oranges
  • 1/3 cup fresh blood orange juice
  • 1/2 cup sugar
For the Assembly
  • 1 blood orange peeled and thinly sliced

Instructions:

  1. Pour 1/2 cup milk into a medium bowl and sprinkle with gelatin. Let sit until gelatin softens, about 10 minutes.
  2. Combine cream, sugar, vanilla, blood orange peel and remaining milk in a large saucepan. Bring cream to a simmer over medium heat, whisking until sugar dissolves the remove from heat and cover. Let steep for 10 minutes.
  3. Bring cream mixture back to a simmer. Add gelatin mixture and stir until dissolved. Strain mixture through a fine-mesh strainer; discard solids. Divide strained cream mixture among six 3” glasses. Chill uncovered until panna cotta is set, overnight.
  4. Now for the jam, combine blood orange zest, blood orange juice and sugar in a heavy, small saucepan. Bring to a boil, stirring occasionally, and boil for 5 to 10 minutes or until mixture thickens slightly. Remove from heat and transfer to a small lidded glass container and refrigerate.
  5. To serve, pour 1 tbsp of jam over the panna cottas and top with thin slices of blood oranges and enjoy!
