Ingredients:
For the Panna Cotta
- 1 cup whole milk, divided
- 2 tsp unflavored gelatin
- 2 1/2 cups heavy whipping cream
- 1/2 cup sugar
- peel from 1 blood orange
- 1 tsp vanilla extract
For the Jam
- Zest from 2 blood oranges
- 1/3 cup fresh blood orange juice
- 1/2 cup sugar
For the Assembly
- 1 blood orange peeled and thinly sliced
Instructions:
- Pour 1/2 cup milk into a medium bowl and sprinkle with gelatin. Let sit until gelatin softens, about 10 minutes.
- Combine cream, sugar, vanilla, blood orange peel and remaining milk in a large saucepan. Bring cream to a simmer over medium heat, whisking until sugar dissolves the remove from heat and cover. Let steep for 10 minutes.
- Bring cream mixture back to a simmer. Add gelatin mixture and stir until dissolved. Strain mixture through a fine-mesh strainer; discard solids. Divide strained cream mixture among six 3” glasses. Chill uncovered until panna cotta is set, overnight.
- Now for the jam, combine blood orange zest, blood orange juice and sugar in a heavy, small saucepan. Bring to a boil, stirring occasionally, and boil for 5 to 10 minutes or until mixture thickens slightly. Remove from heat and transfer to a small lidded glass container and refrigerate.
- To serve, pour 1 tbsp of jam over the panna cottas and top with thin slices of blood oranges and enjoy!
