Bruschetta

Ingredients:

  • 1 cup cherry tomatoes, quartered
  • 2 garlic cloves, minced plus 1 garlic clove for the toast
  • 1 tsp olive oil plus 1 tbsp for toast
  • ¼ cup basil, julienned plus more for serving
  • 1 tbsp balsamic vinegar
  • Salt & pepper
  • 1 french baguette, sliced in 1/4 inch slices

Instructions:

  1. Quarter cut the cherry tomatoes and transfer to a medium bowl along with garlic, olive oil, julienned basil and balsamic vinegar. Salt & pepper to taste. Mix everything together and set aside to marinate, approximately 10-30 minutes. 
  2. Meanwhile, cut ½ inch slices of bread and brush the tops with olive oil and toast in a toaster oven. Once toasted, rub one clove of garlic on each toast to give it that garlicky flavor. 
  3. Place a spoon full of tomato mixture on each piece of toast, sprinkle with basil and enjoy!
