BRUSCHETTA

Ingredients:
- 1 cup cherry tomatoes, quartered
- 2 garlic cloves, minced plus 1 garlic clove for the toast
- 1 tsp olive oil plus 1 tbsp for toast
- ¼ cup basil, julienned plus more for serving
- 1 tbsp balsamic vinegar
- Salt & pepper
- 1 french baguette, sliced in 1/4 inch slices
Instructions:
- Quarter cut the cherry tomatoes and transfer to a medium bowl along with garlic, olive oil, julienned basil and balsamic vinegar. Salt & pepper to taste. Mix everything together and set aside to marinate, approximately 10-30 minutes.
- Meanwhile, cut ½ inch slices of bread and brush the tops with olive oil and toast in a toaster oven. Once toasted, rub one clove of garlic on each toast to give it that garlicky flavor.
- Place a spoon full of tomato mixture on each piece of toast, sprinkle with basil and enjoy!
