Cherry Almond Biscotti

Ingredients:

  • 1/2 cup unsalted butter
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tsp almond extract
  • 1/2 tsp vanilla extract
  • 2 cups all purpose flour
  • 1 and 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup raw almonds
  • 1/2 cup dried cherries, chopped
  • 2-4 oz semi sweet baking chocolate, for topping

Instructions:

  1. Preheat oven to 350F and line a baking sheet with parchment paper.
  2. In a large mixing bowl with the paddle attachment, mix together the butter and sugar until fluffy. Add the eggs (one at a time) then pour the almond and vanilla extracts.
  3. In a separate medium bowl, whisk together flour, baking soda and salt. Pour the dry ingredients in the mixing bowl (in two batches). Remove the paddle attachment and add the chopped dry cherries and almond and combine everything with a rubber spatula.
  4. Cut the dough in half and make two horizontal logs on the parchment paper and place in the oven for 20-25 minutes. Remove from the oven and let cool for 10 minutes then cut ½”-1” slices and place them back on the parchment paper and place in the oven for an additional 15-20 minutes. Remove from the oven and allow it to completely cool.
  5. Meanwhile, melt 2-4 oz of semi sweet baking chocolate in a glass bowl over simmering water. Once the chocolate has melted, remove the bowl off the water and pour the chocolate mixture inside a zip lock bag and cut a small piece of the tip and drizzle the chocolate over the cooled biscottis and enjoy!
