Challah French Toast w/ Mixed Berry Jam Compote

Ingredients:

For the French Toast
  • 4 eggs
  • 1/2 tsp cinnamon
  • 2 tbsp water
  • 4 slices of Challah
  • 1-2 tbsp unsalted butter
  • 1/2 cup jam + 2 tbsp water
  • Blackberries and raspberries for garnish
  • 1 tbsp powdered sugar
For the Mixed Berry Jam
  • 2 cups blackberries
  • 1 cup raspberries
  • 1 cup granulated sugar
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest

Instructions:

For the Mixed Berry Jam
  1. Place blackberries and raspberries in a medium bowl and mash them with a potato masher or any other tool you have in the kitchen. Place the berries in a medium sauce pan over medium-low heat and add sugar until sugar has dissolved by constantly stirring. Add the lemon zest and juice and bring to a boil. Lower the heat to the lowest temperature for 30-40 minutes until it gets a thick consistency, stirring constantly. Patience is key. Take off heat and allow to cool completely. Store in a glass jar and refrigerate.
  2. For the jam compote, mix 2-3 tbsp water to a 1/2 cup of mixed berry jam and whisk until the consistency becomes a bit runny. Set aside.
For the French Toast
  1. In a medium bowl, whisk 4 eggs and mix in water and cinnamon.
  2. Place cast iron over medium heat and melt 1 tbsp of butter per 2 slices of bread. Cut 4 slices of Challah bread and soak them into the egg mixture then into the cast iron and cook 1 minute per side until golden brown. Place the toast on a plate and top with mixed berry jam compote, fresh berries and dust with powdered sugar.
