Ingredients:

  • 2 cups old fashioned rolled oats
  • 1/4 cup maple syrup
  • 1/3 cup coconut oil
  • 1/4 cup honey
  • 1/3 cup brown sugar
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • pinch of salt
  • 1/2 cup raw almonds, roughly chopped
  • 1/2 cup dried cherries

Instructions:

  1. Preheat oven to 350F. Place the oats on a baking sheet and toast for 15 minutes in the oven. Transfer the oats in a medium bowl and combine almonds and dried cherries then set aside. In another medium bowl, whisk together the maple syrup, coconut oil, honey, brown sugar, salt, vanilla and almond extract. Mix the oats and the syrupy mixture until well combined.
  2. Reduce temperature of oven to 325F. Grease a 9” round baking pan. Transfer into oats mixture into the round baking pan and flatten the top with the end of a metal spatula so all the ingredients stick together when baking. Place in the oven for 40 minutes. Remove once golden brown and allow completely cooling for 1 hour then break into delicious clumps. Store in a zip-lock bag for up to 2 weeks.
