Ingredients:
For the Salad
- 1 large romaine heart, chopped
- 2 cups kale, chopped
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, sliced
- 1/2cup salami, chopped
- 1/4 English cucumber, chopped
- 1/4 cup olives
- 1/2 avocado, slices
- 1/4 cup roasted chickpeas
- 1 tbsp pine nuts
- 1/4 cup parmesan, thinly slices
For the Dressing
- 3 tbsp Dijon mustard
- 3 tbsp honey
- 1/4 cup olive oil
- 1 tsp apple cider vinegar
- 1 tsp calibrian chili
- pinch of salt & pepper
Instructions:
- In a small bowl, add all the dressing ingredients and mix everything with an immersion blender. Set aside.
- Chop all salad ingredients and place in a large bowl and toss with dressing. Enjoy!
