Ingredients:

For the Salad
  • 1 large romaine heart, chopped
  • 2 cups kale, chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, sliced
  • 1/2cup salami, chopped
  • 1/4 English cucumber, chopped
  • 1/4 cup olives
  • 1/2 avocado, slices
  • 1/4 cup roasted chickpeas
  • 1 tbsp pine nuts
  • 1/4 cup parmesan, thinly slices
For the Dressing
  • 3 tbsp Dijon mustard
  • 3 tbsp honey
  • 1/4 cup olive oil
  • 1 tsp apple cider vinegar
  • 1 tsp calibrian chili
  • pinch of salt & pepper

Instructions:

  1. In a small bowl, add all the dressing ingredients and mix everything with an immersion blender. Set aside.
  2. Chop all salad ingredients and place in a large bowl and toss with dressing. Enjoy!
