Ingredients:
- 1/2 lb linguine pasta
- 2 tbsp salt
- 1 tbsp unsalted butter
- 1/4 cup parmigiano reggiano
- 1/4 cup pecorino romano
- 1 lemon, juiced (1/4 cup)
- 1/2 cup pasta water
- 1 tbsp black pepper
- salt to taste
Instructions:
- Bring a large pot of water with 2 tbsp salt to boil then add the pasta for 7-9 minutes until pasta is al dente.
- In a large sauce pan, melt the butter then add lemon juice and black pepper on low heat.
- Transfer the pasta straight from the water to the sauce pan and incorporate the pasta in the sauce. Then add the parmigiano and pecorino to the pasta and gradually add the pasta water to ensure it gets the perfect creamy mixture. Add salt to taste (optional). Eat hot and enjoy!
