JICAMA TACOS
Looking for a quick 30 minute meal for those busy days? Well, look no further than these healthy, light and super satisfying jicama tacos. I am a HUGE fan of jicama so when I saw these thinly sliced wraps, I couldn’t wait to try them. Every crunchy, salty, creamy and lemony bite tingles the taste buds! I gotta say, it is a winner!
JICAMA TACOS
Yield: 8-10 tacos

Ingredients:
For the Tacos
- 1 tsp vegetable oil
- 1 lb organic ground beef
- 1/2 jalapeños, sliced (OPTIONAL)
- 3 tbsp taco seasoning
- salt & pepper to taste
- 10 jicama wraps
For the Avocado Creme
- 15 faye greek yogurt
- 1 lime, juiced
- 1/2 avocado
- 1 large garlic clove
- 1 tbsp olive oil
- salt to taste
For the Salsa
- 1/2 avocado, diced
- 1 tomato, diced
- cilantro leaves & lime wedges for garnish
Instructions:
- In a food processor, combine avocados, greek yogurt, garlic, lime, olive oil and salt. Pour into a bowl and set aside.
- In a medium cast iron, pour 1 tsp vegetable oil over medium heat. transfer the ground beef and jalapeños and cook through. Pour out 3/4 of the grease then place back on the stove. Pour in taco seasoning and mix well. Allow to cook for 3-4 minutes then add salt to taste.
- Meanwhile, dice fresh tomatoes, avocados and cilantro leaves for taco topping.
- Place the jicama wraps on a plate, add avocado creme, top with ground beef mixture and sprinkle with fresh avocado/tomato salsa. Add cilantro leaves and squeeze some lime. Feel free to add more avocado creme on top. Enjoy!
