Ingredients:
For the Dressing
- 1 cup plain greek yogurt
- 1/2 avocado
- 1 tbsp olive oil
- 1/2 tsp salt
- 1 garlic clove
- 1/4 tsp black pepper
- 1/2 lemon, juiced
- 1-2 tbsp water to thin out the dressing
For the Farro
- 1 tbsp olive oil
- ½ cup Italian Farro (cooks in 10 mins)
- 1 cup chicken broth
For the Bowl
- 1/3 cup cherry tomatoes, quartered
- 1/3 cup cucumbers, chopped
- 1/4 cup parsley
- 1/4 cup red onion
- 2 tbsp olives
- 2 tbsp feta cheese
Instructions:
- In a small food processor, process all the dressing ingredients until smooth. Feel free to add 1-2 tbsp of water to thin out the dressing, should you choose.
- In a sauce pan, over medium heat, pour in olive oil then the Italian Farro and toss around until lightly toasted. Pour in the chicken broth and bring to boil then put on low heat and cover – allow to simmer for 3-5 mins.
- Meanwhile, chop and prepare the veggies. Take the lid off and allow to cook through until the liquid has evaporated and faro is cooked. Assemble the bowl with Farro and top with remaining ingredients then add a few dollops of dressing. Enjoy!
