Moist Plum Cake

Every summer, I get obsessed with a certain fruit and this year, it’s plums! I don’t just get any plums, I drive 20 mins to pick the perfect sweet, juicy and incredibly ripe plums from Arnett Farms at the Brentwood Farmers Market. Arnett Farms fruits NEVER disappoint and their stone fruit is what I look forward to every year. After the farmers market, I came home and made a moist plum cake that is just divine.

MOIST PLUM CAKE

Ingredients

• Nonstick cooking spray
• 2 eggs, at room temperature
• 1 cup plus 1 tablespoon sugar
• 1/2 cup reduced-fat Greek yogurt OR Buttermilk
• 1/4 cup melted butter, cooled slightly
• 1 tsp pure vanilla extract
• 1 1/2 cups all-purpose flour
• 1 1/2 teaspoons baking powder
• 1/4 teaspoon kosher salt
• 2 - 3 plums, cut into wedges

Instructions

1. Preheat the oven to 375F. Spray an inch baking pan with nonstick cooking spray.
2. Combine the eggs and 1 cup of the sugar in a medium bowl and beat over medium speed with a stand mixer (w/ paddle attachment) until thick, pale, and doubled in size, about 2 minutes. Add the yogurt, melted butter, and vanilla; beat for another minute. Add the flour, baking powder, and salt; mix until just combined, 30 seconds. Pour in the batter into the prepared pan and spread evenly to the edges with a spatula. Place the plum wedges on top and sprinkle with the remaining 1 tablespoon sugar.
3. Bake until a toothpick inserted in the center comes out clean, 40 minutes. Cool completely on a wire rack. Serve with fresh whipped cream or vanilla ice cream.
