Shrimp Ceviche Tostadas

Ingredients:
- 1/2 lb deveined shrimp, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup cherry tomatoes, quartered
- 1/2 avocado, diced
- 1 tbsp cilantro, chopped
- 1/4 mango, diced
- 1 thai chillies, finely chopped (optional)
- 1 lime, juiced (1/4 cup)
- 1/2 tsp salt (or to taste)
Instructions:
- Bring water to boil in medium sauce pan then turn off heat. Place the shrimp into the water for 1-2 mins then directly to an ice bath for a few seconds.
- Remove the shrimp and dice then place in a medium bowl. Dice and chop all other ingredients and place in the same bowl as the shrimp.
- Pour on the lime juice and salt to taste. Enjoy!
