SHRIMP VEGGIE LO MEIN
Easy weeknight dinners that is super satisfying is what i’ve been striving to make lately. I love this recipe for two reasons:
Noodles and carbs are my best friend.
This dish uses up all the veggies that need to be consumed in your fridge. You can legit add as many veggies as possible. I didn’t have shiitake mushrooms but if you have some, add it because mushrooms are a great addition to this dish. Really soaks up all the flavors.
A few notes:
If you are spice lover like me, I would recommend using good chili oil in the sauce. My go to is ZinDrew garlicky chili oil that is so flavorful with a kick.
When cooking the veggies, make sure they still have crunch and they are not soggy. Its great to have that crunchy texture from the veggies while the noodles are soft.
I bet your entire family will love each salty, spicy and satisfying bite. Enjoy!
