SUN DRIED TOMATO PESTO PASTA
Every time I have guests over, I ask them to select something from my blog that they want to try. It never fails, everyone always requests this pasta dish! It’s so popular and is always a huge hit. It definitely helps to make homemade sun dried tomato pesto at home, using good ingredients. Check out my homemade recipe here.
I picked up the semi-dry tomatoes in oil from Eataly simply because they have so much flavor and its completely gourmet from Italy. So easy and perfect for last minute dinner party or weeknight dinners.
Sun Dried Tomato Pesto Pasta
Yield: 4
Ingredients:
- 1/2 lb spaghetti pasta
- 1 tbsp salt
- 1 cup sun dried tomato pesto
- Grated Parmesan and julienne basil, for garnish
Instructions:
- Bring a large pot of water to boil over high-med heat and add 1 tbsp salt. Once the water is boiling, add spaghetti pasta and cook until al dente. In a separate medium non stick pan, warm up the sun dried tomato pesto.
- Transfer the al dente pasta directly from the pot to the sun dried tomato pesto pan and toss until everything is incorporated. Place the pasta on a plate and garnish with freshly grated Parmesan and basil for garnish and enjoy hot!
