ACORN SQUASH HUMMUS

Let me introduce you to a new way to hummus that will knock your socks off! Acorn squash naturally has a sweet and nutty flavor which is enhanced when roasted. Add some tahini, garlic and spices and BOOM! You have a sweet, salty and creamy hummus dip that will be a huge at your Thanksgiving party, Friendsgiving, potluck or any get together as a matter of fact.

First, cut both the acorn squash in half and scoop out the seeds and stringy parts.

Brush on 2 tbsp olive oil and season with salt & pepper. Place on a baking sheet with cut sides up into the oven for 40-50 minutes until tender. Remove from the oven and let cool for 10 minutes.

Scoop out the flesh from the acorn squash and discard the skin. Place the flesh into a food processor along with olive oil, garlic, salt, pepper, cumin and tahini. Blend on high for 2-3 minutes until it creates a smooth consistency. Taste to ensure it doesn't need more seasoning. Note, this hummus is slightly on the sweeter side.

Transfer to a medium bowl and garnish with olive oil and roasted squash seeds. Serve with your favorite chips or pita bread. Enjoy!

Ingredients

For the Roasted Acorn Squash
  • 2 organic acorn squash, cleaned and halved
  • 2 tbsp olive oil 
  • 1/2 tsp salt
  • 1/4 black pepper
For the Hummus
  • Flesh of 2 acorn squash 
  • 1/4 cup olive oil
  • 1 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp ground cumin
  • 3 tbsp tahini
  • 2 garlic cloves, smashed and minced

Instructions

  1. Preheat the oven to 375F.
