CREAMY MUSHROOM SOUP

This mushroom soup is seriously SO creamy, hearty and luscious. Satisfying and earthy taste with every spoonful. Its been raining here for the last few days and i’ve been loving it! Given it rarely rains in LA but when it does, I instantly want a cozy bowl of soup to warm up my soul.

CREAMY MUSHROOM SOUP

This mushroom soup is seriously SO creamy, hearty and luscious. Satisfying and earthy taste with every spoonful.

Ingredients

MUSHROOM SOUP

• 2 tbsp unsalted butter
• 1 cup yellow onion, diced
• 3 cloves minced garlic
• 4 cups mushrooms, diced (I used a mix of white button, oyster & shitake)
• 1 tsp fresh thyme
• 1 tbsp kosher salt 
• 1/4 tsp black pepper
• 5 cups organic vegetable broth
• 1/2 cup organic heavy cream

GARLICKY MUSHROOM TOPPING

• 3 tbsp. extra-virgin olive oil
• 3 garlic cloves, thinly sliced
• 1 cup shitake mushrooms, sliced
• 1 tbsp fresh thyme leaves
• 1/4 tsp kosher salt 
• 1 tsp sherry

Instructions

1. Wash and roughly chop the mushrooms (with stems).  Dice the onion and mince the garlic.  
2. Next, add the butter to a large soup pot and turn on the medium heat. Once the butter has melted, add in the onion, garlic, and mushrooms. Sauté for 15 minutes until the onions & mushrooms are beginning to crisp up and brown. Make sure to stir consistently to evenly cook the vegetables. 
3. Season with thyme, kosher salt, and pepper. Then, add the vegetable broth, reduce the heat to a simmer and cook covered for 30 minutes. 
4. At the 30 minute mark remove the soup lid, stir in the heavy cream, and with an immersion blender, blend the soup until smooth.  Allow to simmer on low for another 15-20 minutes.  Add salt to taste.  
5. Meanwhile, in a small pan over medium heat add olive oil, garlic, sliced shiitakes thyme and salt.  Stir consistently until the mushrooms and garlic are slightly browned.  Add the sherry and allow it to evaporate as you stir the mushroom mixture about 1-2 minutes.  Take off the heat.  
6. Remove the soup from the heat and serve hot.  Top with the garlicky mushroom topping and enjoy!
