Fig & Berry Summer Salad

A delicious and bright summer salad that is light enough for those hot days yet satisfying enough to keep you full for hours. The salt and sweet flavors from the nuts and fruit are just divine. I paired this salad with the fig balsamic from Trader Joes - so good!

FIG & BERRY SUMMER SALAD

Ingredients

• 1 5 oz bag of herbed or mixed lettuce 
• 1 small white wonder cucumber, diced
• 3 sweet figs, quartered
• 1 cup cherry tomatoes, halved
• 1/2 cup blueberries
• 1/3 cup of pecans
• 1/4 cup crumbled feta, optional

Instructions

1. Wash and prep all the veggies.
2. In a medium bow.  Place the pre-washed lettuce and top with cherry tomatoes, cucumbers, figs, blueberries, pecans and crumbled feta.  Toss with your favorite dressing and enjoy!
