GINGERBREAD SNOWFLAKE CAKELETS

I am whisking and whipping this holiday season and what better way to celebrating than by making a few gingerbread snowflake cakelets? They are like a thick cookie than a cake and are moist, chewy and light. A delicious treat your whole family will enjoy. You can also make these in 5” cake pans, package them and give away as a holiday treat to friends, family and neighbors.

GINGERBREAD SNOWFLAKE CAKELETS

Ingredients

• 1 cup (2 sticks) unsalted butter, room temp
• 3/ 4 cup brown sugar
• 1 cup granulated sugar
• 3/4 cup molasses unfortunately
• 4 organic free range eggs
• 3 cups all purpose flour 
• 1 1/2 tsp baking soda
• 1 tbsp ground ginger
• 1 tsp ground cinnamon
• 1 tsp ground nutmeg
• 1/2 tsp ground cloves
• 1/2 cup heavy cream
• 1/2 cup Faye greek yogurt (2%)
• 1 tsp vanilla extract 
• 1 tbsp powdered sugar for dusting (OPTIONAL)

Instructions

1. Preheat the oven to 350F and use a flour baking spray in every corner of the cakelet pans.  
2. In a medium bowl, whisk together the flour, baking soda, ground ginger, cinnamon, nutmeg and cloves.
3. In a small bowl, whisk together heavy cream, yogurt and vanilla extract.  Set aside. 
4. In a stand mixer with a paddle attachment mix together both sugars and butter for 2-3 minutes until light and fluffy.  Add the molasses and mix well until well incorporated.  Then add one egg at a time, scraping the sides of the bowl and mix.  
5. Pour half the flour mixture, mix, then all of cream mixture.  Then finally, add the rest of the flour mixture.  
6. Pour the gingerbread mixture into the cakelet pans 3/4 of the way full.   Place in the oven for 25-30 minutes.  Insert a toothpick in the center of the cakes, if it comes out clean remove from the oven.  Let cool for 10 minutes.  Carefully flip the cakelets over to remove from the pan.  Allow to completely cool, dust with powdered sugar and enjoy!
