GLUTEN FREE PANZANELLA SALAD
I may physically be in Los Angeles but mentally I’m at a cliff side restaurant in Italy devouring a panzanella salad. Who’s with me?

Gluten Free Panzanella Salad

Ingredients:
FOR THE SALAD:
- 3 large tomatoes on the vine, cut 1” cubes
- 1/4 red onion, thinly sliced
- 8 large basil leaves, torn
- 1 cup vinaigrette
- 2 cups croutons
FOR THE GLUTEN FREE CROUTONS:
- 1/2 Kim & Jake's peasant bread, cubed
- 1/4 cup olive oil
- Kosher Salt
FOR THE VINAIGRETTE:
- 2 large tomatoes on the vine, grated
- 2 tbsp aged balsamic vinegar
- 1 tbsp red wine vinegar
- 1 shallot, diced
- 2 garlic cloves
- 6-8 large basil leaves
- 1 tbsp olive oil
- Kosher salt
Instructions:
- Preheat the oven to 400F. Slice the bread into cubes and place on a baking sheet. Pour olive oil over the bread and generously sprinkle with kosher salt. Toss it together so everything combines then place in the oven for 10 minutes. Watch closely so it does not burn. Remove from the oven and allow to cool.
- Meanwhile, prepare the vinaigrette. Cut 2 tomatoes in half and grate the cut side on a large hole box grater and discard the skin. Place the grated tomatoes and the juice food processor and add diced shallots, 2 garlic cloves, balsamic vinegar, red wine vinegar, olive oil, basil leaves and salt. Blend until amplified. Taste and add more salt if needed.
- Chop up the tomatoes into 1” cubes and place in a large bowl along with red onion and torn basil leaves. Add the croutons and 1/2 cup of vinaigrette. Toss together and allow to marinate for about 15 minutes. Pour the other 1/2 cup of vinaigrette before you are ready to serve.
