TOSTADA PIZZA

Taco Tuesdays are great but what about Tostada Pizza Tuesdays?! Why the heck not?! You can thank my hungry belly for coming up with this concoction last night. So good and satisfying without feeling heavy.

Ingredients:

  • 4 tostadas
  • ½ cup refried beans
  • 1/3 cup cherry tomatoes, quartered
  • ¼ cup pickled jalapeños
  • ¼ avocado, diced
  • 1 tbsp cotija cheese, crumbled
  • 2 tbsp cilantro leaves
  • ½ lime wedges, garnish

Instructions:

  1. Heat refried beans in a small nonstick pan and place in a bowl. Take a spoonful of warm refried beans spread on the tostadas. Cut the tomatoes in quarters and dice the avocados. Top the tostadas with cherry tomatoes, pickled jalapeno slices, diced avocados, crumbled cotija cheese and cilantro leaves. Squeeze a wedge of lime over the tostadas and enjoy!
