HARISSA ROASTED HEIRLOOM CARROTS

I am in love with roasted veggies any time of the year. It really adds a deeper layer of flavor to the veggies. One of my faves - Harissa roasted Heirloom Carrots. Harissa is an underrated North African spice with the main ingredient being roasted pepper. Baklouti peppers to be exact or serrano peppers, spices and herbs such as garlic paste, caraway seeds, coriander seeds, cumin and olive oil to carry the oil-soluble flavors. I highly recommend this spice if you haven’t tried it. Definitely one to add to your spice rack.
HARRISA ROASTED HEIRLOOM CARROTS
Ingredients
- 1 lb heirloom carrots, washed and peeled
- 2 tbsp olive oil
- 1 tsp salt
- 1 tbsp harissa paste
Instructions
- Preheat the oven to 400F.
- Wash and peel the heirloom carrots, leaving the ends on. In a small bowl, mix the harissa paste and olive oil together. Place the carrots on a baking sheet and brush on the harissa mixture. Sprinkle on kosher salt and place in the oven for 30 minutes. Turn the carrots every 15 minutes.
- Transfer to a plate and serve hot. Enjoy!
