ROASTED ACORN SQUASH
Looking for a perfect fall side dish that is easy, quick and pleases a crowd? Well, look no further than this roasted acorn squash that is beautiful and only uses 4 household ingredients. This is also perfect for Thanksgiving!
I only had one acorn squash left at home but feel free to use two or three for a family of 4 and double/triple the recipe. I honestly just made this to snack on since it is so delicious and incredibly flavorful. Here is the simple recipe:
ROASTED ACORN SQUASH

Ingredients
- 1 acorn squash, sliced
- 2 tbsp olive oil
- 1 tsp salt & black pepper
Instructions
- Preheat the oven to 400F.
- Wash and cut both ends of acorn squash then cut in half. Remove the seeds and cut into 1/2 inch slices. Brush the squash with olive oil and generously sprinkle with salt and pepper. Place in the oven for 20 minutes until golden brown and tender.
- Place on a serving platter and enjoy warm.
