A light, simple and elegant summer salad

Ingredients

• 3/4 melon, sliced
• 2-3 oz thinly sliced prosciutto
• 2 tbsp good olive oil

Instructions

1. Cut the cantaloupe in half, lengthwise.  Discard the seeds and scrape the core clean.  Cut into 1-inch slices and arrange on a platter.  Drape the slices of thinly sliced prosciutto over the melon then lightly drizzle with olive oil.  Enjoy!
