PEACH & BLUEBERRY PUFF PASTRY

Ingredients

• 1 puff pastry sheet, thawed
• 2 tbsp flour 
• 2 peaches, sliced 
• 1/2 cup blueberries 
• 1 tbsp corn starch
• 1/2 cup brown sugar 
• 1/2 lemon, juiced 
• 2 tbsp sliced almonds 
• 1 egg

For the Cream Cheese

• 6 oz cream cheese, room temp
• 1/2 cup powdered sugar
• 1 tsp vanilla extract

Instructions

1. Preheat the oven to 400F.  In a small bowl whisk together cream cheese, powdered sugar and vanilla extract.  Set aside.  
2. In a medium bowl, add the sliced peaches, blueberries, corn starch, brown sugar and lemon juice and combine.  Set aside.  
3. Dust some flour on a parchment paper and lightly roll out the thawed puff pastry sheet.  Cut into rectangles then cut rectangles within rectangles and poke the center rectangle with a fork.  Place the rectangles about 1 inches apart.  With a small flat spatula slatter the center with the cream cheese filling. Place slices of peaches and blueberries in the center.  Brush the edges with egg wash and place in the oven for 15 minutes.  Remove from the oven and sprinkle with sliced almonds.  Allow to cool for 10 minutes then enjoy!
