Peri Peri Chicken Salad with Champagne Vinegar Dressing

Ingredients:
For Chicken Marinade
- 1/2 lb chicken thighs
- 1/2 cup peri peri chicken marinade
For the Salad
- 2 heads romaine lettuce
- 1 cup cherry tomatoes, quartered
- 1 radish, sliced thinly
- 1 ear of corn, grilled
- 1 avocado, chopped
- 1 celery stalks, chopped
- 1/4 red onion, sliced
- 1 heirloom carrots, chopped
For the Dressing
- 1/4 cup champagne vinegar
- 1 tsp dijon mustard
- 1/2 lemon, juiced
- 1/4 cup olive oil
- 1 garlic clove
- salt & pepper
Instructions:
- Marinade the chicken thighs in the peri peri marinade for 30 mins - 1 hr.
- While the chicken is marinating, add all the dressing ingredients in a large measuring cup and blend with an emulsifier. Set aside.
- Cut all the veggies and transfer to a large serving bowl. Grill the chicken about 4 minutes on each side until cooked through then transfer to a cutting board and cut lengthwise.
- Add the chicken on top of the salad and pour the dressing. Toss and enjoy!
