Peri Peri Chicken Salad with Champagne Vinegar Dressing

Ingredients:

For Chicken Marinade
  • 1/2 lb chicken thighs
  • 1/2 cup peri peri chicken marinade
For the Salad
  • 2 heads romaine lettuce
  • 1 cup cherry tomatoes, quartered
  • 1 radish, sliced thinly
  • 1 ear of corn, grilled
  • 1 avocado, chopped
  • 1 celery stalks, chopped
  • 1/4 red onion, sliced
  • 1 heirloom carrots, chopped
For the Dressing
  • 1/4 cup champagne vinegar
  • 1 tsp dijon mustard
  • 1/2 lemon, juiced
  • 1/4 cup olive oil
  • 1 garlic clove
  • salt & pepper

Instructions:

  1. Marinade the chicken thighs in the peri peri marinade for 30 mins - 1 hr. 
  2. While the chicken is marinating, add all the dressing ingredients in a large measuring cup and blend with an emulsifier. Set aside.
  3. Cut all the veggies and transfer to a large serving bowl. Grill the chicken about 4 minutes on each side until cooked through then transfer to a cutting board and cut lengthwise. 
  4. Add the chicken on top of the salad and pour the dressing. Toss and enjoy!
