TOMATO CANNELLINI SALAD

I am coming off of a sugar high and getting very sad that Christmas and more importantly cookie season is over. As I look forward to a fresh and healthy start for 2021, I am kicking off my 7 day sugar free challenge. Wish me luck!

Today, instead of consuming gingerbread cookies for lunch, I made myself a fresh and delicious tomato Cannellini salad with parsley, lemon juice and a dash of olive oil. Ready in 10 minutes and makes my taste buds sing! Here are the ingredients you will need:

  • 1 cup grape tomatoes

  • 29 oz can of organic Cannellini beans

  • 2 tbsp flat leaf parsley

  • 1 lemon

  • 1-2 tbsp good olive oil

  • Kosher salt & pepper to season
