Asparagus & Prosciutto Omelette
Breakfast is served! Asparagus & prosciutto omelette - this is what I call a breakfast of champions. The crunch from the asparagus, saltiness from prosciutto and the richness from the Parmesan makes for a perfect mix of flavors. Throw on some zucchini blossoms if you fancy!
Wash and prep the asparagus. Roughly cut in 2-inch pieces. Dice and mince the shallots and garlic. Pour in 1 tbsp olive oil into a pan over medium heat. Sautee garlic and shallots for 1 minute then add the asparagus and cook for 2 minutes. Add the prosciutto and cook until it becomes crispy.
Meanwhile, whisk together 2 eggs, heavy cream, parmesan, salt & pepper.
Pour over the sauteed veggies, add the zucchini blossoms and cover the top for 2-3 minutes. Enjoy!
