Ribbon Salad w/ Dijon Vinaigrette

An effortlessly beautiful and delicious summer salad. Did I mention it’s ready within 10 mins?! I used up the last of my gorgeous farm fresh veggies this weekend by making this ribbon salad. The ribbons of green & yellow zucchinis, cucumbers and heirloom carrots, tossed in a dijon mustard and red wine vinaigrette is just divine with every bite.

RIBBON SALAD W/ DIJON VINAIGRETTE

Ingredients

For the salad

• 1 green zucchini
• 1 yellow zucchini
• 2 heirloom carrots, peeled
• 1 cucumber 

For the vinaigrette

• 1 tbsp dijon mustard
• 2 tbsp red wine vinegar 
• 1/2 tsp dried oregano
• 1/2 tsp kosher salt
• 1/4 tsp black pepper
• 1/4 cup olive oil 

Instructions

1. Wash and prep the veggies.  Using a peeler, peel the outlayer of the heirloom carrots and discard.  Cut the ends of the zucchinis, carrots and cucumbers the discard.  
2. Peel the zucchinis, heirloom carrots and cucumbers into ribbons.  Place the ribbons in a bowl.  Set aside.  
3. Add dijon mustard, red wine vinegar, dried oregano, salt, pepper and whisk together.  Slowly add the olive oil while wisking.  Pour over the ribbons and toss together.  Transfer onto a plate and enjoy!
