GOAT CHEESE & CHERRY TOMATO TART

Goat Cheese & Cherry Tomato Tart

Puff pastry + herbed goat cheese + heirloom cherry tomatoes = heavenly summer tart. Sprinkle on some Maldon salt and hand me a glass of rosé!

My bestie had a baby recently so I made her this delicious tart and brought it to her place and met the little angel 😊

GOAT CHEESE & CHERRY TOMATO TART

Ingredients

• 1 sheet of puff pastry
• 2 tbsp flour for dusting
• 1 egg, whisked 
• 5.2 oz Boursin cheese, room temp
• 1 pint (2 cups) heirloom cherry tomatoes, halved
• 3 sprigs of thyme and pinch of Maldon salt for garnish

Instructions

1. Preheat oven to 400F.  Roll out puff pastry on lightly floured parchment paper.  Cut a 1" border then prick the center with a fork. In a small bowl, whisk 1 egg and brush on the edges of the puff pastry then slide the parchment paper on a baking sheet.  Transfer into the oven to bake for 15 mins or until golden brown.  Allow to cool for 10 minutes.  
2. Meanwhile, wash and cut the heirloom cherry tomatoes in half.  Set aside. 
3. Once the puff pastry has cooled, spread the Boursin cheese all over the center of the tart.  Then place the halved cherry tomatoes cut side up.  Sprinkle on Maldon flaky salt and sprigs and time.  Cut into it and enjoy!
