Ingredients:
For the Margarita:
- 1/2 cup peach jalapeno puree
- 2 oz Tequila blanco
- 1/2 oz Cointreau
- 4 slices of jalapeños
- 1 tbsp kosher salt
For the Peach Jalapeno Puree:
- 2 ripe soft peaches, remove skin and pit
- 1/4 cup jalapeno simple syrup
For Jalapeno Simple Syrup:
- 1/4 cup granulated sugar
- 4 slices jalapenos
- 1/2 cup water
Instructions:
- To make the simple syrup, add sugar, water and jalapeno slices in a small sauce pan and bring to boil. Take off heat and allow it to seep and cool down to room temperature.
- While that simple syrup cools, peel 2 peaches with a pairing knife and remove the pit. Slice into pieces and transfer to a blender along with 1/4 cup of the simple syrup. Blend until pureed.
- Transfer the jalapeno slices from the simple syrup into a shaker and muddle. Add ice, tequila, cointreau, peach jalapeno puree and shake. Lightly dip the tip of the margarita glass in the peach puree then dab into kosher salt. Pour the drink into your margarita glass and enjoy!
