SHRIMP FARRO BOWL

Ingredients:

For the Shrimp:
  • ¾ lb deveined shrimp
  • 1 tsp olive oil
  • salt & pepper
For the Farro:
  • 1 tbsp olive oil
  • 1 ½ Italian farro
  • 2 ½ cups chicken stock or veggie broth
  • pitch of salt
For the Bowl:
  • ½ cup carrot, grated
  • 1 cup edamame
  • Cilantro leaves
  • Sriracha sauce, in preferred
For the Dressing:
  • 1 tbsp rice vinegar
  • 1 tsp honey
  • 1 1/2 tbsp soy sauce
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • 1 tbsp sesame oil
  • pinch of salt

Instructions:

  1. In a small bowl, whisk together all the dressing ingredients and set aside.
  2. Clean the shrimp and drizzle with olive oil and sprinkle salt & pepper and grill for about a minute per side. Transfer to a plate and set aside. Meanwhile, in a medium saucepan, heat olive oil then add farro for 2 minutes. Then add the chicken stock and a pitch of salt and bring to boil. Turn down the heat to low and cover to simmer for 10 minutes.
  3. Prepare the veggies by grating the carrot and edamame along with cilantro. Once the farro is cooked through, transfer to a large bowl and add the grilled shrimp and veggies. Drizzle the dressing on top and toss everything together. Enjoy!
