Ingredients:
For the Shrimp:
- ¾ lb deveined shrimp
- 1 tsp olive oil
- salt & pepper
For the Farro:
- 1 tbsp olive oil
- 1 ½ Italian farro
- 2 ½ cups chicken stock or veggie broth
- pitch of salt
For the Bowl:
- ½ cup carrot, grated
- 1 cup edamame
- Cilantro leaves
- Sriracha sauce, in preferred
For the Dressing:
- 1 tbsp rice vinegar
- 1 tsp honey
- 1 1/2 tbsp soy sauce
- 1 garlic clove, minced
- 1 tbsp olive oil
- 1 tbsp sesame oil
- pinch of salt
Instructions:
- In a small bowl, whisk together all the dressing ingredients and set aside.
- Clean the shrimp and drizzle with olive oil and sprinkle salt & pepper and grill for about a minute per side. Transfer to a plate and set aside. Meanwhile, in a medium saucepan, heat olive oil then add farro for 2 minutes. Then add the chicken stock and a pitch of salt and bring to boil. Turn down the heat to low and cover to simmer for 10 minutes.
- Prepare the veggies by grating the carrot and edamame along with cilantro. Once the farro is cooked through, transfer to a large bowl and add the grilled shrimp and veggies. Drizzle the dressing on top and toss everything together. Enjoy!
